I?m back?miss me?
Monday mid-day my laptop starting FREAKING out - I got the dreaded blue screen and in the end had to reformat. I?m sad to lose all my emails, but other than that, I had been pretty diligent about saving everything I cared the most about on my external drive. So, after a day of reinstalling and reconfiguring, I?m pretty much back to speed. Bonuses - no more trojans (or whatever was wreaking havoc on my computer) and I?m back to almost 80G of free space! Yay!

Pretty Pineapple Torte
? c butter, softened
1 cup honey, divided
3 eggs, separated
1 20 ounce can crushed pineapple
1 teaspoon vanilla
2 ? cups flour
2 teaspoons baking powder
? teaspoon baking soda
? teaspoon salt
FILLING:
1 and ? cups whipping cream
? cup of the above honey
? teaspoon almond extract
2 tablespoons silvered almonds, toasted
In a large mixing bowl, cream butter and ? cup of the honey. Beat in egg yolks. Drain pineapple, reserving 2/3 cup of juice.
In a small bowl, combine juice and ? cup of crushed pineapple and vanilla (set remaining pineapple aside for filling).
Combine dry ingredients, add to the creamed mixture alternately with pineapple mixture. In a small mixing bowl, beat egg whites until soft peaks form. Add remaining honey, one tablespoon at a time, beating until stiff peaks form. Fold a fourth of the egg whites into batter, fold in remaining whites. Spoon into two greased and floured 9 inch round cake pans. Bake at 325 for about 25 minutes, or til cake springs back lightly when touched. Cool for 10 minutes, remove from pans to wire racks to cool completely.
For filling:
Beat the cream, honey, and almond extract in mixing bowl until stiff peaks form. Fold in reserved pineapple. Split each cake layer in half horizontally, spread about ? cup filling between each layer, spread remaining filling over the top. Sprinkle with almonds.
YIELD: 10-12

Trying out Google’s blogging server to see how it compares to Wordpress. Lately, WP has become extremely annoying and I’m wondering what else is out there.
Hopefully this will be a neat place to jot down thoughts.
